SHEPHERD'S PIE
A cold weather favorite!
This recipe is perfect for the colder weather days. The mashed potatoes are the ultimate comfort food for me. You can definitely change the recipe up to make it all veggie using any mix of veggies in place of the meat layer as well as substitute sweet potatoes or even cauliflower mash for the gold potatoes! Yum!
Ingredients
1 - 1.5 lbs. ground beef or ground turkey ( I like grass fed ground beef)
half yellow or white onion, chopped small
4 or more cloves of garlic, minced
1-3 carrots depending on size
1/2 cup frozen peas
1/2 cup organic frozen corn
7-10 gold potatoes
pat of grass fed butter for mashed potatoes
splash of milk of choice for mashed potatoes ( I used organic whole milk)
sea salt
pepper
paprika
oregano
tyme
olive oil or avocado oil for cooking
Instructions
Preheat oven to 400 degress F
Boil a big pot of water for potatoes
Peel and cut potatoes, add to boiling water and cook until soft when poked with a fork
*While potatoes are cooking I start on the meat layer below
Brown ground meat (I use a cast iron skillet)
Add seasonings: sea salt, pepper, paprika, oregano and tyme ( I just measure by eye but 1/2 tsp to 1tsp of each)
Add in garlic and onion saute a couple minutes until soft
Add in carrots, saute for a few minutes until soft
Add in frozen peas and corn and saute until both a soft
When potatoes are fully cooked, drain water, put butter in same pot and return cooked potatoes back to pot. Add sea salt, mash and add splash of milk.
In an large oven safe baking dish, add the meat and veggie layer first and then add the mashed potato layer on top.
Smooth out with a silicone spatula. Using a fork, gently run the fork across the mashed potato layer to create textured lines for crispiness while baking.
Bake on 400 for 25-30 minutes
